Rosemary Potato Rolls
White bread has slipped into taboo. To slather freshly churned butter on a hot white bread dinner roll seems sinful, in the current dietary fashion. In truth, I wouldn’t eat these dinner rolls with any frequency, but there is no more appropriate vehicle for rich gravy than this fluffy, fragrant delight. To many, potato bread is also the pinnacle of hamburger buns. If you want to try that out, make this recipe, but shape the buns like the English muffins described here. After they rise, bake as instructed in this recipe. An apple smoked bacon burger with chèvre, arugula, and onion jam on a rosemary potato bun might just inspire a conversion experience.
Though white bread is seen as nutritionally vacuous, the addition of fresh herbs and potato here make this bread more healthful, yet texturally as soft, chewy, and yummy as any bread out there.
